Cloves are harvested just before they open, then destalked before being sun-dried.
In the course of the drying process, they change color from carmine to reddish-brown.
Cloves are oil-rich, whole, and contain no foreign matters. They are bright reddish-brown in color. Well dried cargo. No problem of moisture / fungus until buyer's warehouse.
