Coffee roasting is a heating process that brings out the aroma and flavor locked inside a green coffee seed, which has a mild, grassy taste on its own, and turns the beans brown. The flavor profile of a bean\'s roast level will depend on the varietal and geographic location of that bean as well as the roasting method. Roasting coffee transforms the chemical and physical properties of green coffee beans into roasted coffee products. The roasting process is what produces the characteristic flavor of coffee by causing the green coffee beans to change in taste. Unroasted beans contain similar if not higher levels of acids, protein, sugars, and caffeine as those that have been roasted, but lack the taste of roasted coffee beans due to the Maillard and other chemical reactions that occur during roasting. Coffee tends to be roasted close to where it will be consumed, as green coffee is more stable than roasted beans.
