Contains a mix of tender and somewhat tough muscles, which are fabricated into smaller cuts known as the Chuck Eye Roll and the Chuck Under Blade. Boneless Chuck Roll is prepared from a square cut chuck with all bones and back strap removed. The chuck roll tail is removed with a straight cut 1â?? from the chuck eye (rib end) and 1 from the main muscle seam on the neck end (measured at 1st rib). The neck break is 3 vertebrae from the atlas bone.
