Citral is the main component of citrus fruit's peel oil. It is especially found in orange peel. Citral is a mixture of neral and geranial which are monoterpene aldehydes (Maarse, 1991). Citral has been applied to food, cosmetics, and beverages as a natural ingredient for its passionate lemon aroma and flavor. In addition, Citral is used as a flavor and for fortifying lemon oil. It also has strong antimicrobial qualities and pheromonal effects in acari and insects. Citral is used in the synthesis of vitamin A, lycopene, ionone, and methyl ionone, to mask the smell of smoke.
