The gum arabic is a natural gum exudation, also known as acacia gum, is a mixture composed of polysaccharides and glycoprotein that is used mainly as a stabilizer in the food industry. The gum arabic is a product of the two species of acacia trees, Acacia Senegal and Acacia Seyal.
Sudan is the largest producer of gum arabic, with more than 75% of the Senegalese quality supply, which is of the best quality. The acacia tree is found in the dry regions of the country, such as Darfur and Kordofan.
