In Spain, thanks to its varied orography and weather conditions, and especially for having such a wide variety of breeds of livestock, both in terms of cows, sheep and goats, over 150 different types of different cheese are produced here and there are 26 Designations of Origin. There are many types and flavours of cheese: cheese made with cow’s milk, sheep’s milk, goat’s milk, or a mixture of the three. There are also queso fresco, semi-mature and mature cheeses to enjoy. Made with unpasteurized or pasteurized milk. There are blue cheeses, cream cheeses, those made with wine, with paprika… Nowadays the cheese artisans all over Spain make cheese in a traditional way with the help of the latest technology. The different methods used have been passed down from generation to generation.
