Albacore (Thunnus alalunga) is found in the open waters of all tropical and temperate oceans, and the Mediterranean Sea. It has a metallic blue skin on the topside which fades into a silvery white belly and it sports very long pectoral fins which help it swim over 80 km/h. Albacore is one of the smaller tuna species, reaching sizes between skipjack and yellowfin.

Compared to its bigeye and yellowfin tuna cousins, albacore¡¯s meat is whiter, with a beautiful rosy hue. Albacore is one of the two main canned tuna species (along with skipjack). It is the only tuna species which may be marketed as "white meat tuna" in the United States.
