The Rata Tree can be found hidden in the pristine forests of the West Coast in the South Island of New Zealand, Aotearoa. Sporadically flowering means this precious honey is in limited quantities, as it is only expected to flower every two to three years. When in flower, the Rata tree produces the most spectacular red nettle flower. The irregularity of supply is offset by the belief of honey connoisseurs that it is one of the finest honeys found in the world. This rare honey is spectacularly smooth but not sweet. Flavour Profile: Distinctly sweet, with a fruity and slightly salty flavour.
