Coconut milk is the only cow milk surrogate that carries the same name milk even though it is entirely plant based. Indeed it is white, creamy and has a rich taste. After the coconut water is retrieved from the nut, it is de-shelled and the brown skin shaved-off. After cleaning the white flesh with hot water steam, it is grinded and freshly pressed with a screw press. The raw coconut milk is then homogenized, filled in BPA free cans and sterilized. The whole process does not take more than 2-3 hours which is important to keep the freshness of the milk.
