Peppercorn is native to the western ghats of Southern India. Harvesting starts around January 2021. When the peppercorn fruit is dry of milk, then the picking begins. Clusters of peppercorn are handpicked from the vine, then machine separated from stalk. The corns are then sun dried and the darkening stage takes place. Once dry, we take the corns to a nearby mill to be garbled (size sorted). We taste our peppercorn each harvest and check for the initial sweetness followed by a heat and ending with a good pungent kick. With peppercorn grown in Southern India we've tasted notes of sweet floral, lemon, and licorice.
