Fennel oil is obtained by steam distillation of the dried fruits of Foeniculum vulgare. The oil is pale yellow to brownish-yellow in colour. The product has a characteristic sweet, green, earthy, spicy note. Anethole and fenchone are major components in Fennel oil.
